Ingredients:
- 16 large shrimp, peeled and deveined
- 8 slices of bacon, cut in half
- 1/4 cup barbecue sauce
- 1 tablespoon chipotle peppers in adobo sauce, minced
- 1 tablespoon honey
- 1 tablespoon lime juice
- Salt and pepper, to taste
- Wooden toothpicks
Instructions:
- Preheat your grill or oven to medium-high heat.
- In a small bowl, combine the barbecue sauce, minced chipotle peppers, honey, lime juice, salt, and pepper. Mix well to make the chipotle BBQ sauce.
- Take each shrimp and wrap it with a half-slice of bacon. Secure the bacon in place by inserting a wooden toothpick through the shrimp.
- Brush the bacon-wrapped shrimp with the chipotle BBQ sauce, coating them evenly on all sides.
- Place the shrimp on the preheated grill or on a baking sheet if using the oven. Cook for about 3-4 minutes per side, or until the bacon is crispy and the shrimp is cooked through. If using the oven, bake for approximately 12-15 minutes, turning the shrimp halfway through.
- Once cooked, remove the shrimp from the grill or oven and let them cool slightly.
- Serve the bacon-wrapped shrimp with chipotle BBQ sauce as an appetizer or main dish. You can remove the toothpicks before serving or let your guests do it themselves.
